1tspshrimppaste 1 onion, roughly chopped 6 macadamia nuts 1 lemongrass, roughly chopped 1 tbsp ginger, roughly chopped 1 tbsp turmeric, roughly chopped 1 tbsp palm sugar 3 cloves garlic, roughly chopped 2 red birdeye chilli, seeded, chopped 4 kaffir lime leaves, chopped 2 tsps salt 4 large banana leaves (see tip) 1 whole chicken, size 16, rinsed, patted dry Tomato sambal, steamed 1 Preheat oven to moderate 180 C.
2 Wrap shrimp paste in foil and toast in a dry frying pan on low heat, 10 mins, turning. Unwrap and cool.
3 Process shrimp paste, onions, nuts and lemongrass, ginger, turmeric, sugar, garlic, chillies, lime leaves and salt, pulsing to a smooth paste.
