500gmincedbeef ¼ cup parsley, leaves picked and chopped 2 tbsps whole egg mayonnaise, plus extra to serve 2 tbsps cornichons, finely chopped (or use pickles) 1 tbsp Dijon mustard, plus extra to serve 1 tbsp capers, drained and finely chopped 3 anchovies, drained and finely chopped 1 eschalot, peeled and finely chopped 2 tbsps olive oil 4 toasted sesame seed buns 2 cups watercress, washed and leaves picked 160 g sliced blue cheese Fruit chutney, to serve 1 In a medium bowl, combine beef, parsley, mayonnaise, cornichons or pickles, mustard, capers, anchovies and eschalot. Season. Divide and shape mixture into 4 flattened patties. Cover and chill until required.
