KOHLRABI AND SWEET POTATO ROSTI WITH MAPLE BACON AND LIME AVOCADO

90g chia seeds
175g kohlrabi, peeled and grated
260g sweet potato, grated
2 spring onions, thinly sliced
2 kale leaves, stalks removed and finely chopped (about 2 cups)
4 bacon slices, cut into thirds
60ml pure maple syrup
2 avocados, halved lengthways, skin and stones discarded Zest and juice of 1 lime
