I like to finish my jugged hare with mushrooms, so to this recipe you can add 200g sliced button mushrooms or any good wild mushrooms you have handy. If you wish to add mushrooms do so before the adding of the blood so they cook well, but do not fall apart.

100g lard, or bacon fat, or butter if you must
The legs and shoulders of 1 brown hare, well trimmed and washed
