TUSCAN RED LENTIL SOUP
Lentils are high in fibre, iron, and folate.

HEAT 2 Tbsp. olive oil in large pot over medium. Cook 4 chopped carrots, 2 chopped onions, 2 tsp. dried oreganum until soft, about 6 minutes. ADD 2 litres low-sodium veggie broth, 1 ½ cup red lentils, 2 tsp. salt, and ½ tsp. pepper, and bring to a boil. Lower heat and simmer, covered, stirring occasionally, until lentils are soft, 30 minutes. Stir in 140 to 170g baby spinach to wilt. TOP with shaved Parmesan.
