2024 GIIYONG FESTIVAL This year’s Giiyong Festival will be held in Eden on the far south coast of New South Wales on Saturday 9 November. Warms hands, warm heart I thought you’d like to see a photo of the fingerless gloves I’ve knitted following the how-to guide in the latest issue. These were the first pair I made for myself and have since been making pairs as gifts for a couple of my friends. They are quick to knit up and make a thoughtful gift during these chilly weeks and months, but what I love the most is that if I use different colours for the cuff, hand and finger sections, it’s a wonderful way to use up all of those small lengths of wool I haven’t been able to bring myself to throw out. A sustainable, low-tech way of preserving your homegrown winter produce that comes with wonderful health benefits. There are plenty of ways to preserve the vegies you’re still pulling out of your winter garden, but none can really match the enormous health benefits of fermentation, more specifically lacto-fermentation. In simple terms lacto-fermentation is a natural process where bacteria convert sugars into lactic acid.
