Chicken Tortellini Soup

2 tablespoons olive oil1 onion, chopped3 carrots, sliced3 celery stalks, sliced3 garlic cloves, finely chopped1 teaspoon kosher salt½ teaspoon black pepper½ teaspoon Italian seasoning¼ teaspoon red pepper flakes3 quarts chicken broth3½ cups shredded rotisserie chicken1 20-ounce package refrigerated cheese tortellini¼ cup chopped fresh parsleyGrated parmesan cheese, for serving
1 Heat the olive oil in a medium dutch oven over medium heat. Add the onion, carrots and celery, and cook, stirring frequently, until the vegetables start to soften, 5 to 7 minutes. Add the garlic, salt, pepper, Italian seasoning and red pepper flakes and cook until fragrant, about 1 minute.
