RASPBERRY PANCAKES WITH COCONUT YOGHURT INGREDIENTS • 2 cups frozen raspberries • 2 tbsp icing sugar • 2 tsp finely grated lime rind • 2 tbsp lime juice • 1 cup self-raising flour • ¼ cup caster sugar • 2 eggs • 1 cup buttermilk • 1 cup coconut yoghurt METHOD 1 Combine half the berries, icing sugar, rind and juice in a small saucepan over medium heat.
