Recently I had a week off to work on another project and to travel interstate to see my oh-so-cute niece and nephew (hey Maddie and Charlie!), but I missed the OK! office a lot while I was away! There are many reasons why: the deadline chocolate jar (Cadbury Caramilk we love you!), the team (of course!), the photo meetings where we get to see all the shots we want to share with you – but most of all, it was just being here to help create my favourite magazine! MEXICAN PULL-APART PORK SERVES 6 INGREDIENTS • 2 medium red capsicums, sliced thinly • 2 medium onions, sliced thinly • 375g bottle chunky mild tomato salsa • 1 cup barbecue sauce • 4 garlic cloves, crushed • 3 tsp ground cumin • 2 tsp cayenne pepper • 1 tsp dried oregano • 1kg boneless pork shoulder • 12 corn tortillas • 1 cup coriander sprigs • 1 cup sour cream • 1 lime, cut into wedges METHOD 1 Combine capsicum, onion, salsa, barbecue sauce, garlic, cumin, cayenne pepper and oregano in a 4.5-litre (18-cup) slow cooker.
