CHOCOLATE & STRAWBERRY CHEESECAKE IN A GLASS INGREDIENTS • 6 strawberries, washed, hulled, quartered• 1 tbsp Cointreau, or liqueur of choice• 220g tub extra-light spreadable cream cheese• 2 tbsp icing sugar, sifted• 60g dark chocolate, melted and cooled• 1 tsp finely grated orange zest• 1 tsp vanilla bean paste• 4 digestive biscuits, crumbed• Piped chocolate hearts to serve (see tip) METHOD 1 In a small bowl, combine strawberries and Cointreau.
