CRISPY POLENTA & ARTICHOKE INGREDIENTS • 4 cups vegetable stock• 1 1/4 cups instant polenta• 1/4 cup olive oil• 260g jar chargrilled capsicum, drained, chopped• 1/4 cup parmesan, grated• 280g jar artichoke hearts, drained, quartered METHOD 1 Lightly grease and line a 20cm x 30cm slice pan with baking paper. 2 Place stock in a medium saucepan and bring to boil on high heat. Gradually add polenta, whisking constantly for 2-3 minutes or until polenta is thick. Season. Pour into tray, spreading evenly. Cover with baking paper; cool. 3 Using a 3cm round cutter, cut out bases from firm polenta. 4 Heat oil in a large frying pan on medium. Cook rounds in 2 batches, 1-2 minutes each side, until golden. Drain. 5 Place a teaspoon of capsicum on each base. Sprinkle with parmesan and top…
