PRAWN TORTILLAS WITH CORN SALSA
SERVES 4
INGREDIENTS
• 420g can sweet corn kernels, drained
• 1 avocado, seeded, peeled, chopped
• 2 green onions, sliced, plus extra, to serve
• Juice of 1 lime, plus wedges, to serve
• 1/3 cup sour cream
• 1/2 tsp ground cumin
• Tabasco sauce, to taste
• 1 baby cos lettuce, leaves separated, washed
• 8 mini tortillas, warmed
• 750g cooked medium tiger prawns, peeled, deveined, tails on
METHOD
1 In a medium bowl, combine corn, avocado, onions and half the juice. Toss gently and season to taste.
2 In a small bowl, combine the sour cream, remaining juice and cumin. Season with Tabasco sauce to taste.
3 To assemble the tortillas, place two cos lettuce leaves on each tortilla. Spoon over a little sour cream mixture and corn salsa. Top…
