CAPSICUM & SILVERBEET CRUSTLESS QUICHE SERVES 4 INGREDIENTS • 1 tbsp olive oil • 250g silverbeet leaves, stalks removed, sliced thinly • 4 green onions, sliced thinly • 1/2 cup drained chargrilled capsicum, sliced • 8 eggs • 2 tbsp shredded mint • 100g feta, crumbled • 2 tbsp pine nuts • Salad leaves, to serve METHOD 1 Preheat oven to moderate, 180°C.
