HEARTY BEEF, VEGETABLE & BARLEY SOUP
INGREDIENTS
• 1 tbsp olive oil • 1kg beef chuck steak, trimmed, cubed • 3 stalks celery, trimmed, chopped • 2 onions, chopped • 200g button mushrooms, sliced • 1 carrot, chopped • 2 dried porcini mushrooms, chopped • 2 garlic cloves, crushed • 4 cups beef stock • 4 cups water • 3/4 cup pearl barley • 2 sprigs thyme • 1 bay leaf • Chopped parsley and crusty bread, to serve METHOD
1 In a large saucepan, heat oil on high. Brown beef, 3-4 minutes, turning. Set aside. 2 Sauté vegies and garlic, 3-4 minutes, in same pan. 3 Add beef, stock, water, barley and herbs. Boil, reduce heat to low and simmer, partially covered, 11/2 hours. Stir occasionally. Season. Sprinkle with parsley and serve with bread.
