ARROZ CON POLLO

INGREDIENTS
• 1 tsp olive oil• 1 onion, chopped• 1 garlic clove, crushed• 500g chicken thigh fillets, cubed• 1 tsp ground cumin• 1 tsp paprika• 3/4 cup long-grain white rice• 400g can diced tomatoes• 1 cup chicken stock or white wine• 340g jar chargrilled capsicum, drained, roughly chopped• 1/2 cup frozen peas• 1/4 cup black olives• Chopped parsley, to serve METHOD
1 Heat oil in a large saucepan on high. Sauté onion and garlic 1-2 minutes, until tender. 2 Add chicken and cook 1-2 minutes, stirring occasionally, until brown all over. 3 Stir in cumin and paprika, and cook for 1 minute. Mix in rice, tomatoes and stock. 4 Bring to the boil. Reduce heat to low and simmer, covered, for 10-15 minutes, adding capsicum, peas and olives 2-3 minutes before the end of cooking time.
