This week I went to a hens party where the dress code was ’90s hip hop (sidenote: we did a private dance class which I will never recover from). PROFITEROLES WITH CHANTILLY CREAM & VIENNA ALMONDS INGREDIENTS • 1 cup water• 75g butter• 1 cup plain flour• 4 eggs, lightly beaten• 300ml thickened cream• 2 tbsp icing sugar• 1/2 tsp vanilla paste• 3/4 cup Vienna almonds, chopped• Hot fudge sauce, to serve (see tip) METHOD 1 Preheat oven to hot, 200°C.
