RHUBARB & STRAWBERRY CRUMBLE INGREDIENTS • 1 bunch rhubarb, trimmed, washed, cut into 3cm lengths • 2 x 250g punnets strawberries, hulled, whole • 1/2 cup caster sugar CRUMBLE • 1/2 cup plain flour • 1/2 cup butter, chopped • 1/2 cup pistachios, chopped • 1/3 cup caster sugar METHOD 1 Preheat oven to moderate, 180°C. Lightly grease six 1-cup ramekins. 2 In a large bowl, combine rhubarb, berries and sugar. Spoon into dishes. 3 CRUMBLE Sift flour into a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Stir in nuts and sugar. 4 Sprinkle crumble evenly over fruit mixture in each dish. Bake 15-20 minutes, until golden.
