BARBECUED GARLIC PRAWNS BRUSCHETTA
INGREDIENTS
• 1kg green prawns, peeled, deveined, tails intact• 1/3 cup olive oil, plus extra for brushing• 3 cloves garlic, crushed• Sourdough or baguette loaf, cut into 1.5cm slices• 1/2 cup parsley, roughly chopped• Lemon, to serve METHOD
1 In a bowl, combine prawns, oil and garlic, tossing well. Season to taste. 2 Preheat barbecue plate and grill on high. Brush bread with extra oil. Chargrill 1-2 minutes each side until lightly charred. 3 Pour prawns onto hot plate with marinade. Cook, turning, 2-3 minutes until prawns change colour and are cooked through. Toss through parsley. 4 Pile onto bruschetta bases. Serve with lemon to squeeze over.
TIP To make this even faster, buy ready-peeled green prawns with the tails left on.
