EGGS BENEDICT INGREDIENTS • 20g butter• 80g packet baby spinach leaves• 1 tbsp vinegar• 8 eggs• 4 English muffins, halved, toasted• 4 slices ham HOLLANDAISE SAUCE • 1/2 cup white vinegar• 2 tbsp water• 1/2 tsp peppercorns• 4 egg yolks• 250g melted, clarified butter METHOD 1 Melt butter in a frying pan on medium.
