WEDGES CON CARNE
INGREDIENTS
• 750g potatoes, cut into thick wedges• 2 tbsp olive oil• 30g packet taco spice mix• 1 onion, chopped• 1 red capsicum, seeded, chopped• 250g beef mince• 400g can tomatoes• 400g can kidney beans, drained, rinsed• 1/2 cup shredded cheese• Sour cream, to serve Guacamole
• 1 avocado, seeded, peeled, chopped• 1/4 cup coriander, chopped• 1/2 lemon, juice• 1 small tomato, finely chopped METHOD
1 Preheat oven to hot, 220°C. Line a large oven tray with baking paper. 2 In a bowl, toss potatoes in half the oil. Arrange in a single layer on the tray and sprinkle with 2 tsp spice mix. Bake 35-40 minutes, turning halfway, until tender and golden. 3 Meanwhile, heat remaining oil in a large frying pan on medium. Cook onion and capsicum 4-5 minutes, until tender.
