PEKING DUCK SANG CHOY BOW SERVES 4 INGREDIENTS • 2 tbsp vegetable oil• 100g fresh shiitake mushrooms, finely chopped• 1 eschalot, finely sliced• 1 garlic clove, crushed• 1 Peking roast duck, flesh finely chopped• 227g can water chestnuts, finely chopped• 1 carrot, cut into matchstick-sized pieces• 2 tbsp Shaoxing wine• 1/4 cup hoisin sauce• 2 tbsp light soy sauce• 100g snow peas, thinly sliced lengthways• 1 cup bean sprouts• 8-12 iceberg lettuce cups, trimmed METHOD 1 In a wok or large frying pan, heat oil until very hot. Stir-fry mushrooms, eschalot and garlic for 1 minute. Add duck, water chestnuts and carrot. Stir-fry a further 1 minute. 2 Add wine to wok to deglaze. Add sauces and bring to simmer.
