FETTUCCINE WITH GOAT’S CHEESE, PESTO & TOMATO INGREDIENTS • 50g truss cherry tomatoes, quartered • 1 tbsp olive oil • 300g fettuccine Goat’s cheese pesto • 2 cups basil leaves • 1 tbsp pine nuts • 1/2 cup grated parmesan • 2 garlic cloves • 1/2 cup extra virgin olive oil • 100g soft goat’s cheese, crumbled METHOD 1 Preheat oven to hot 200°C. Toss tomatoes and oil in a baking dish. Season and bake for 10 minutes until softened. 2 To make the goat’s cheese pesto, combine basil, pine nuts, half the parmesan and garlic in a food processor. Pulse until finely chopped. With the motor running, gradually add oil until mixture is thick and smooth.
