LEMON AND RICOTTA STUFFED CHICKEN BREAST INGREDIENTS • 1 tbsp olive oil• 8 green onions, finely chopped• 3 garlic cloves, crushed• 850g fresh ricotta• 1/3 cup basil, finely chopped• 1/3 cup parsley, finely chopped• 2 tbsp lemon zest, finely grated• 10 x 200g single chicken breasts, skin on• 1/4 cup olive oil METHOD 1 Preheat oven to 180°C. 2 Heat oil in a frying pan on medium. Sauté onion and garlic for about 3-5 minutes or until soft. Transfer to a large bowl with ricotta, herbs and zest. Season to taste and mix well. 3 Using your fingers, gently loosen skin on chicken breasts, leaving attached down sides and at one end. Gently push ricotta mixture evenly under skin. Arrange on tray.
