CREAMY TOMATO PASTA INGREDIENTS • 2 x 250g punnets cherry tomatoes• 6 whole garlic cloves• ¼ cup olive oil• 375g packet angel hair pasta• ¼ cup white wine (or verjuice)• ½ cup thickened cream• 1 bunch basil, leaves picked• Grated parmesan, salad to serve (optional) METHOD 1 Preheat oven to hot, 200°C. 2 Place tomatoes and garlic in a flame-proof baking dish. Drizzle with olive oil and season to taste. Bake 15-20 minutes until tender (they will start to collapse). 3 Meanwhile, in a large saucepan of boiling salted water, cook pasta following packet instructions. Drain and return to the saucepan. 4 Remove tomatoes from oven. Squeeze garlic over tomatoes and sprinkle with wine. Place on the cooktop and toss, 2-3 minutes until wine reduces by half.
