STROGANOFF WITH PASTA INGREDIENTS • 50g butter• 375g Portobello mushrooms, sliced• 1 onion, chopped• 1 garlic clove, crushed• 2 tbsp tomato paste• 4 (500g) chicken thigh fillets, trimmed, sliced• 11/2 cups chicken stock• 1/2 cup sour cream• Cooked pasta and parsley leaves to serve METHOD 1 In a large frying pan, melt butter on medium. Sauté mushrooms, onion and garlic 5-6 minutes, until tender. Add tomato paste stirring 2-3 minutes. 2 Mix in chicken and stock. Cook on medium, 5-10 minutes, stirring until chicken is cooked through and liquid is reduced by half. 3 Stir sour cream through and simmer 1-2 minutes, until heated through. Season to taste.
