KUMARA SOUP WITH CROQUE MONSIEUR
INGREDIENTS
• 20g butter• 1 leek, white part only, sliced• 1 celery stalk, chopped• 2 garlic cloves, crushed• 650g kumara, peeled, chopped• 1L chicken or vegetable stock• Pure cream and chopped chives, to serve Croque Monsieur • Half baguette, cut on an angle into 1cm slices• Butter, for spreading• 2 tbsp Dijon mustard• 100g ham slices• 2 slices Swiss cheese, quartered METHOD
1 In a large saucepan, melt butter over medium heat. Sauté leek, celery and garlic for 3-4 minutes until tender. 2 Add kumara and stock. Bring to the boil, then reduce heat to medium and simmer for 15-20 minutes, until tender. 3 Meanwhile, to make the croque monsieur, spread both sides of each slice of bread with butter.
