SPICED PARSNIP SOUP WITH CHORIZO
INGREDIENTS
• 2 tbsp olive oil• 2 onions, chopped• 2 garlic cloves, crushed• 1 tsp cumin seeds• 750g parsnips, peeled, chopped• 3 large potatoes, peeled, chopped• 8 cups (2L) chicken stock• 1 smoked chorizo, chopped• 1/2 cup cream• Crumbled fetta, chopped chives and toasted olive bread, to serve METHOD
1 In a large saucepan, heat half the oil on medium. Add onion, garlic and cumin seeds and cook, covered, for 6-8 minutes, stirring occasionally. 2 Add parsnip and potato. Cook, covered, for 10 minutes, stirring occasionally. Add stock and bring to the boil. Simmer, covered, for 25-30 minutes, until vegetables are tender. 3 Meanwhile, process chorizo in a food processor until crumbs form. In a small frying pan, heat remaining oil on medium.
