OVEN-BAKED MUSHROOM & SPINACH RISOTTO INGREDIENTS • 40g butter• 1 onion, finely chopped• 2 garlic cloves, crushed• 2 cups Arborio rice• 350g Portobello mushrooms, thinly sliced• 250g button mushrooms, sliced• 2 tsp thyme leaves• 1/3 cup white wine• 5 cups chicken or vegetable stock, hot• 100g baby spinach• 1/4 cup grated parmesan cheese, plus extra, to serve• Pine nuts, toasted, to serve METHOD 1 Preheat oven to 180°C. 2 In a large flame-proof casserole dish, melt butter on medium. Sauté onion and garlic for about 2-3 minutes or until tender. Stir in rice and cook for 1 minute. Add mushrooms and thyme and cook, stirring, for about 3-4 minutes or until lightly golden.
