PRAWN PAD THAI
INGREDIENTS
• 200g packet rice stick noodles• 2 tbsp peanut oil• 350g green prawns, peeled, deveined, tails intact• 1 green onion, sliced, plus extra to serve• 2 garlic cloves, crushed• 1/3 cup Pad Thai spice paste• 2 tbsp lemon juice• 1 tsp fish sauce• 1 bird’s eye chilli, finely sliced• 2 eggs• 11/2 cups bean sprouts• Crushed peanuts, sliced red chilli and lemon wedges, to serve METHOD
1 Prepare noodles following packet instructions. Separate and drain. 2 In a wok or large frying pan, heat oil on high. Stir-fry prawns for 2-3 minutes, until they change colour and are just cooked through. Set aside. 3 Using the same wok, stir-fry onion and garlic for 1 minute.
