EASY SPAGHETTI & MEATBALLS
INGREDIENTS
• 1 tbsp olive oil• 1 onion, finely diced• 2 garlic cloves, roughly chopped• 700ml jar tomato passata• 1/2 cup water• 1/3 cup red wine• 1 tbsp red wine vinegar• 2 tsp brown sugar• 500g pork mince• 2 slices bread• 1/2 cup grated parmesan, plus extra to serve• 2 rindless bacon rashers, roughly chopped• 2 tbsp roughly chopped oregano leaves• 1 tbsp capers• 1 tsp fennel seeds• Grated zest of 1/2 lemon• 500g spaghetti, cooked as per packet directions METHOD
1 Heat oil in a large, deep frying pan. Sauté onion for 2-3 minutes or until soft. Transfer half the onion to a food processor. 2 Add garlic to pan, cooking for 1 minute.
