GINGER CHICKEN NOODLES
INGREDIENTS
• 270g packet soba noodles• 2 chicken breasts fillets, halved horizontally• 150g snow peas, trimmed, sliced• 1 carrot, peeled, julienned• 2 stalks celery, julienned• 3 green onions, sliced• Coriander leaves, to serve Dressing • 2 tbsp avocado oil• 2 tbsp soy sauce• 2 tbsp rice wine vinegar• 2 tbsp finely shredded pickled ginger, plus 2 tbsp juice• 1 tsp wasabi paste• 1 tsp sesame oil METHOD
1 In a saucepan of boiling water, cook noodles following packet instructions. 2 Meanwhile, heat a large frying pan on high. Spray chicken with olive oil and season to taste. Cook 2-3 minutes each side, until cooked through. Transfer to a plate. 3 For the dressing, in a screwtop jar, combine all ingredients.
