COCONUT & RASPBERRY CAKE INGREDIENTS • 185g butter, chopped, at room temperature• 3/4 cup caster sugar• 3 eggs• 13/4 cups self-raising flour, sifted, plus 1 tbsp extra• 3-4 tbsp milk• 1 cup frozen raspberries• 1/2 cup desiccated coconut Topping • 1/2 cup thickened cream• 1/2 cup fresh raspberries, lightly crushed METHOD 1 Preheat oven to 180°C. Lightly grease and line a 20cm round cake pan with baking paper. 2 In a small bowl, using an electric mixer, cream butter and sugar until light and fluffy.
