DOLMADES MEZZE PLATTER
INGREDIENTS
â˘Â 2 tbsp olive oil, plus extra to serveâ˘Â 1 small onion, finely choppedâ˘Â 1 garlic clove, crushedâ˘Â 100g beef minceâ˘Â 11/2 cups cooked long grain riceâ˘Â 1/3 cup currantsâ˘Â 1/3 cup toasted pine nutsâ˘Â 1 tbsp chopped oregano, plus extra to serveâ˘Â 20 grape vine leavesâ˘Â Crumbled feta, olives, flatbread, to serve Hummus â˘Â 400g can chickpeas, drained, rinsedâ˘Â 1/4 cup lemon juiceâ˘Â 2 tbsp tahiniâ˘Â 2 tbsp olive oilâ˘Â 1 tbsp water, plus extra as requiredâ˘Â 1 garlic clove, crushedâ˘Â 1/2 tsp ground cumin METHOD
1 Heat oil in a large frying pan on medium. SautĂŠ onion and garlic 2-3 minutes until tender. Add mince and cook 4-5 minutes until well browned, breaking up lumps as it cooks. Stir rice, currants, pine nuts and oregano through. Season to taste and allow to cool.
