LONGEVITY & WEALTH NOODLE SOUP
INGREDIENTS
• 1.5 litres (6 cups) chicken or vegetable stock• 100g shitake mushrooms, thinly sliced• 3cm piece ginger, peeled, julienned• 1 tbsp reduced-salt soy sauce, or to taste• 1 tbsp Chinese rice wine• 440g packet fresh thin egg noodles• 1 cup finely shredded Chinese cabbage• 1 small carrot, julienned• 2 green onions, thinly sliced• Coriander and mint leaves, sliced red chilli to serve METHOD
1 In a large saucepan, combine stock, mushrooms, ginger, soy and wine. Bring to boil on high. Reduce heat to medium and simmer for 4-5 minutes. 2 Add noodles and simmer 1-2 minutes until tender. Then add cabbage and carrot. 3 Divide noodles among serving bowls. Ladle over hot broth. Top with onion, herbs and chilli to serve.
TIP To make this a little more substantial, add some shredded cooked chicken…
