CHICKEN & PECAN SALAD IN A JAR INGREDIENTS • 1/2 small barbecue chicken, skin removed, shredded into chunks • 60g roughly chopped pecans • 1 pear, cored and thinly sliced • 1/2 red onion, thinly sliced • 2 cups mixed salad leaves • 60g goat’s cheese, crumbled • 40g dried cranberries Maple cider vinaigrette • 60ml olive oil • 60ml apple cider vinegar • 2 tbsp maple syrup or rice malt syrup • 2 tbsp Dijon mustard METHOD 1 To make the vinaigrette, mix all of the ingredients together and season to taste with pepper and salt. 2 To assemble the salads, divide dressing between two jars.
