BLACK FOREST MERINGUE CAKE
INGREDIENTS
• 8 eggs, separated• 2 cups caster sugar, plus ¼ cup extra• ½ cup cocoa powder• 300g dark chocolate, melted, cooled• 600ml cream, whipped, plus extra to serve• 2 x 415g cans black pitted cherries, strained, syrup reserved METHOD
1 Preheat oven to very low, 120›C. Line 4 oven trays with baking paper. 2 In a large bowl, using an electric mixer, beat egg whites and sugar together 5-6 minutes, until thick and glossy. Sift cocoa over top, beating to combine. 3 Divide mixture between lined trays. Spread into 25cm discs. Bake 2 hours until crisp.
