Seafood paella

Ingredients
• 600g cleaned squid, with tentacles • 1.25 litres fish stock • ½ tsp saffron threads • 2 tsp smoked paprika • 1 tbsp olive oil • 1 medium onion, chopped coarsely • 1 long red chilli, chopped • 2 cloves garlic, sliced thinly • 4 sprigs fresh thyme • 1 medium red capsicum, sliced thinly • 400g can diced tomatoes • 2 cups calasparra or arborio rice • 12 uncooked medium king prawns, peeled, deveined, with tails intact • 250g black mussels, scrubbed, beards removed • 200g ling fillets, cut into 4cm pieces • 200g baby green beans, halved lengthways • 1 cup whole-egg mayonnaise • 2 cloves garlic, extra, crushed • Chopped parsley, to serve Method
