Chicken taquitos
PREP + COOK TIME 35 MINUTES SERVES 4
12 x 15cm corn tortillas
1 rotisserie chicken
½ cup (140g) barbecue sauce
2 teaspoons Tabasco chipotle sauce, plus extra to serve
300g light sour cream
2 cobs corn, kernels removed
400g can black beans, drained, rinsed
2/3 cup (200g) grated cheddar
Coriander leaves, sliced fresh jalapeño chillies, quartered cherry tomatoes, sliced red onion, lime wedges, to serve
GUACAMOLE
2 medium avocados
1 spring onion, chopped finely
1 garlic clove, grated finely
2 tablespoons lime juice
1 small red chilli, seeded, chopped finely
2 tablespoons chopped coriander stems
Salt and freshly ground black pepper, to season
