Fluffy buttermilk scones PREP & COOK TIME 45 MINS MAKES 18-20 Plain flour, for dusting 3 cups (450g) self-raising flour 1 cup (150g) wholewheat self-raising flour ¼ cup (55g) caster sugar 1 teaspoon salt 180g chilled, unsalted butter, finely diced 200g sultanas or dates, pitted, roughly chopped 2 cups (500ml) buttermilk Butter or jam and softly whipped cream, to serve 1 Preheat oven to 200°C/180°C fan. It’s a funny thing. In my 27 years on Fair Go, a regular complaint was about toilet paper. For some reason, generations of consumers were outraged their toilet rolls seemed to be getting shorter. We’d buy an array of toilet rolls, unroll them and measure them. Sure, some rolls were longer than others. But then some rolls were thicker than others, and others were double or triple ply. What a kind and generous thing for a homeless man to do, offering her grandson Bart a birthday treat, while he would have to go without. The homeless numbers are growing rapidly as a result of the current economic climate. Homeless people used to be a big-city problem but, sadly, it’s a growing problem nationwide. When my friend Tony Astle asked me if I’d emcee his fundraiser for the Breast Cancer Foundation, I said yes in a heartbeat. Tony is a lovely man and a good friend, and the cause is a very good one.
