Passionfruit tart SERVES 8 PREP & COOK TIME 1 HOUR 30 MINUTES (+ REFRIGERATION & COOLING) 1 ¹⁄ ³ cups (200g) plain flour ½ tsp fine salt 150g cold butter, coarsely grated ¼ cup (50ml) iced water ¾ cup (165g) caster sugar 4 eggs ¼ cup (60ml) lemon juice ½ cup (125ml) passionfruit pulp, plus extra for serving 300ml cream 1 For the pastry, place flour and salt in a medium bowl. The best part about being a Christmas baby who has a significant birthday and who is entering a new decade is that you can, legitimately, have a birthday year of celebrations.
