Everything packed salad
SERVES 2-3 TIME 25 MINUTES
2 heads baby cos or other tender
lettuce, trimmed, chopped
1 medium cucumber, diced
180g cooked quinoa or chickpeas
50g rocket
1 medium carrot, peeled, grated
1 small head fennel, trimmed,
thinly sliced
8 cherry tomatoes, quartered
½ large red pepper, chopped
½ avocado, diced
5 medjool dates, stoned, chopped
3 medium radishes, ends
trimmed, thinly sliced
5g chopped fresh mint leaves
5g fresh parsley leaves
20g Parmesan or other cheese
2 tablespoons chopped pickled jalapeño
Herby vinaigrette (recipe below)
Pumpkin seeds, dry toasted,
lightly salted, for serving
1 In a large bowl, gently toss lettuce, cucumber, quinoa or chickpeas, rocket, carrot, fennel, tomatoes, red pepper, avocado, dates, radishes, mint, parsley, parmesan and jalapeño.
