Feta-stuffed tomato toasts MAKES 4 PREP + COOK TIME 30 MINS 100g marinated feta½ teaspoon fresh thyme leaves, chopped½ teaspoon finely grated lemon rind1 small clove garlic, crushed500g cocktail truss tomatoes¹/³ cup (80ml) extra virgin olive oil100g green kale, torn4 thick slices wholegrain sourdough 1 Preheat oven to 180°C/160°C fan. Line an oven tray with baking paper. 2 Combine feta, thyme, lemon rind and garlic in a small bowl. Using scissors, snip the vine from tomatoes, leaving the calyx intact.
