Chorizo & potato fritters
MAKES 40 PREP + COOK TIME 40 MINUTES
2 teaspoons vegetable oil, plus extra for deep-frying1 chorizo sausage, chopped finely1 small onion, chopped finely2 fresh small red Thai chillies, chopped finely2 medium courgettes, grated coarsely450g waxy potatoes, peeled, grated coarsely1 small orange ku¯mara, peeled, grated coarsely3 eggs, beaten lightly1 cup (150g) plain flour1 teaspoon sweet paprika
SWEET CHILLI DIPPING SAUCE
½ cup (120g) sour cream 2 tablespoons sweet chilli sauce
1 Heat oil in a medium frying pan. Cook chorizo, onion and chilli, stirring, until onion softens. Add courgette and cook, stirring, for 1 minute. Cool for 10 minutes.
2 To make the sweet chilli dipping sauce, combine the ingredients together in a small bowl.
