Sweetcorn, feta & bacon fritters

2 corn cobs or 1 ½ cups frozen kernels (or 420g can corn kernels, drained) 150g feta, crumbled 2 spring onions, thinly sliced 2 eggs, whisked 100ml milk 60g plain flour 1 tsp baking powder 1 tsp dried chilli flakes (optional) Sea-salt flakes, freshly ground black pepper, to season Olive oil, for shallow-frying Grilled bacon, maple syrup, honey or chilli sauce, to serve 1 Preheat oven to 150°C fan-
2 forced (130°C conventional). Remove hull and silks from corn cobs. Using a sharp knife, slice off kernels, close to cob. Put in a large bowl.
3 Add the feta, spring onions, eggs, milk, flour, baking powder and chilli flakes (if using). Season, then mix together well.
