Chicken tacos

Heat an oiled large frying pan over medium-high heat. Cook 1 finely chopped medium onion, stirring, until softened. Add 500g chicken mince and cook, stirring, until browned. Add 35g packet taco seasoning mix. Cook, stirring, until fragrant. Add half a 375g bottle thick and chunky salsa and ½ cup (125ml) water. Cook, stirring occasionally, for 7 minutes or until mixture thickens. Remove from heat. Heat 10 (140g) stand ’n’ stuff taco shells following packet directions. Fill taco shells with some shredded red cabbage, chicken mixture, quartered cherry tomatoes, grated cheddar, fresh coriander leaves, remaining taco sauce and sour cream, if you like.
