Well, it took five lockdowns but finally, I succumbed. All through lockdowns 1-4, I watched golden loaves of bread, perfectly iced cakes and healthy gluten-free biscuits pop up on my social media feeds, as people used their free time to rediscover old home-making skills. Spanakopita quesadillas PREP + COOK TIME 35 MINUTES MAKES 4 Heat 2 teaspoons oil in a large heavy-based non-stick frying pan over medium heat. Cook 1 small finely chopped red onion, 1 crushed garlic clove and 200g coarsely chopped baby spinach leaves, stirring, for 2 minutes or until softened. Transfer to a large bowl and cool. A friend of mine stormed out of a Zoom meeting the other day. I am so entranced by this idea, I’ve been visualising it in my mind’s eye ever since.
