I teach in a low-decile school. This week, we celebrate a very important group of people who help make New Zealand, and in some cases the world, a better place – volunteers. Our cover star Pippa Wetzell has been giving her time and raising awareness of the charity Bellyful, which provides meals for families who have a new baby in the home. While I personally didn’t use this charity when I was a new mum, I do remember with gratitude the people who were so generous when I had each of my four children. There would be meals dropped off, an offer of a ride here or there, helping with the older kids so I could focus on the newborn and so much more. Meatball & risoni soup SERVES 4 PREP + COOK TIME 45 MINUTES 500g pork and fennel sausages ½ cup (50g) fresh breadcrumbs 2 garlic cloves, crushed 1/3 cup (25g) finely grated Parmesan ¼ cup finely chopped flat-leaf parsley 2 tablespoons olive oil 1 small onion, finely chopped 1 bunch kale, leaves picked, coarsely torn 2 litres (8 cups) chicken stock 1 cup (220g) risoni 1 tablespoon chopped fresh dill 1 Preheat oven to 200°C. Crème caramel SERVES 8 PREP + COOK TIME 1 HOUR (+ OVERNIGHT REFRIGERATION) ¾ cup (165g) caster sugar, plus1/ 3 cup (75g) extra ½ cup (125ml) water 6 eggs 2 teaspoons vanilla extract 300ml cream 1¾ cups (430ml) milk 1 Preheat the oven to 160°C/140°C fan. 2 Combine the sugar and water in a medium saucepan. Stir over medium heat, without boiling, until sugar dissolves. Brush side of the saucepan with a wet pastry brush to remove any undissolved sugar crystals. Bring to the boil and boil, uncovered, without stirring, until mixture is a deep caramel colour. Remove from heat and pour into a deep 20cm round cake pan.
