Last week on talkback, I was asking people whether they’d ever been so moved by a cause, so impassioned by conviction, that they had taken to the streets and marched. Golden meringues with baked rhubarb PREP + COOK TIME 1 HOUR (+ COOLING) SERVES 4 1 bunch (500g) rhubarb, trimmed Finely grated rind and juice of 1 orange ¼ cup (60ml) maple syrup 1 vanilla bean, split, seeds scraped 3 egg whites ¾ cup (165g) caster sugar ½ tsp vanilla bean paste 1 tsp white vinegar 1 cup (250ml) thickened cream, whipped 1 Preheat oven to 180°C. 2 Cut the rhubarb into 4cm lengths and place in an ovenproof baking dish with the orange rind, juice, maple syrup, vanilla bean and seeds.
