Spaghetti with meatballs & cherry tomatoes PREP + COOK TIME 35 MINUTES SERVE 4 Cook 375g spaghetti in boiling salted water until tender. Drain. Squeeze the meat from 750g beef sausages and roll into balls. Cook in an oiled large frying pan, over medium heat, until browned all over. Add 250g quartered cherry tomatoes, 400g bottle tomato pasta sauce and 2 tablespoons finely chopped fresh basil. Bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes or until meatballs are cooked through. Season. Combine sauce, spaghetti and ¼ cup (20g) grated Parmesan in a bowl. Boy, am I glad last year is over! I did not enjoy it one little bit. For the most part, it’s been for personal reasons, but COVID really didn’t help. However, I know there are some people who’ve really taken positives from these most extraordinary of times. And I salute them.
