Fig, hazelnut & pomegranate salad
SERVES 6 AS A SIDE
DRESSING
3 tbsp olive oil Juice of 1 lemon Salt and pepper, to taste SALAD
450g mixed salad leaves (such as rocket, mesclun or watercress) 6 fresh figs, sliced 100g goat’s cheese or feta, crumbled ½ cup salted hazelnuts, toasted ½ pomegranate, seeds only TO SERVE
Drizzle of honey, optional 1 To make the dressing, mix the olive oil, lemon juice, salt and pepper in a small jar with a lid. Shake until well combined.
2 In a large mixing bowl, toss the salad leaves with the dressing by hand. Ensure the greens are evenly coated.
3 Place the greens onto a plate and scatter over the sliced figs, goat’s cheese, hazelnuts and pomegranate seeds. Drizzle over honey if using.…
